Faux Cajun

Ingredients:
Andouille sausage (chicken) about 8 cut into slices.
Pre-cooked small shrimps (about 1.5 to 2 cups) (from Frozen isle)
Frozen okra
1 can creme of celery soup
1 can creme of chicken
1 10oz can of rotel
2 packages of brown rice and quinoa (find them in a box of 5 at Costco)
Slap yo mama Cajun seasoning

Directions:
Preheat oven to 400 Fahrenheit
Microwave brown rice and quinoa as instructed in package then put in 8×13 and 8×8 baking dishes

Cut sausage as stated earlier

Mix cut sausage, shrimp, okra, soups and rotel in mixing bowl (I recommend a very large mixing bowel). Season to taste with Cajun seasoning.

Pour mixture on top of brown rice and quinoa then bake 1 hour and 10 minutes in oven.

Some Notes:

This recipe came about because I greatly enjoy cajun food, especially the flavors, and one day I¬†REALLY wanted some cajun but didn’t want to go to a restaurant or spend hours making something like Gumbo from scratch. Because I didn’t want to go out and was too lazy to spend hours in the kitchen I did some googling and found a “cajun bake” that sounded good enough but I knew still wouldn’t hit the spot so I started making modifications, also I didn’t have most of the ingredients it called for, thus this recipe was born… created?..baked?, whatever, you know what I mean.

If you enjoy cajun food but aren’t really into the heat or are making this for people who aren’t so much into the heat I have found that you can leave out the Cajun Seasoning and it still tastes great and has less heat to it.

Also note, I’m actually horrible with measuring out my seasonings and usually put some on and go “yeah, that looks right” or “Nope, needs more!”
